Our Commitment to a Sustainable Future

Even though we don’t necessarily think “sustainability” is the perfect word to describe what we do in our restaurants, we do believe it’s our responsibility to keep looking for better ways to serve our team, our guests, our community, and our environment.

Our top priority has always been relationships.
Whether it’s building stronger connections with our suppliers or sharing our story with guests, good relationships are a powerful tool – they help us learn, inspire, and grow together.

We invest heavily in the development of our team – from professional training to an in-house mentoring program and a hands-on leadership style.
For us, a fair salary and a healthy work environment are the baseline, not the goal.

We care deeply about being active in our community, including working with various charitable organizations and supporting those in need. We are also passionate about supporting Estonia’s food industry and promoting our local food culture. Whenever possible, we source ingredients from local farmers and small producers.

Our mission is to showcase local ingredients on the plates we serve in our restaurants.
We are also active participants in the Estonian Green Tiger platform, which aims to develop a balanced economic model for Estonia and the world.

Minimizing waste is a key priority for us.
We are continuously reducing the use of single-use plastics and pay close attention to making full use of by-products generated during food preparation. That might mean turning yesterday’s bread into miso sauces or using citrus and vegetable peels creatively in final dishes.

Waste sorting is part of our standard hygiene practices. As a result, food scraps become compost, and glass bottles get a second life through recycling.
All of our restaurant’s energy consumption is covered by 100% renewable sources – solar, wind, and hydro.

We know there’s still a long road ahead, but we believe that by walking it, we can offer our guests more creativity, more depth, and more warmth in what we do.
